Buttery, fluffy, flavorful…. and 100% Whole Grain.
Of all the things that I’ve missed going gluten free, biscuits have been near the top of the list. There’s something about having that buttery, bready element to go along with your meal that is deeply ingrained in my ideal of good, home cooked food. It probably comes from having several rounds of biscuits with dinner around my Grandparent’s table. Us kids eating just one was never enough to satisfy them… but I have to admit it wasn’t hard to talk me into that 2nd (or 3rd) fluffy little piece of heaven. Sometimes those childhood memories kick in and a meal without a biscuit suddenly seems just a little bit wrong.
So when the inspiration for this recipe hit, the idea was barely short of an obsession. Biscuits are dreamy enough as it is, but add cheddar, garlic, parsley and a whole lot of butter? Maybe it’s the south in me, but regardless, I felt slightly crazy at the idea. I spent a couple of weeks in a daze where nothing but developing this recipe seemed to matter. Folks, I lost sleep over this one! I woke up early on a Saturday morning from a dream that I was baking cheddar biscuits and had to immediately go make that dream come true. And after lots of tries, fails and brave taste testers, these perfect little buttery dreams came out of my oven. Happy Day! :)
These biscuits come out crumbly on the edges, fluffy on the inside, and buttery all through. They’re made with 100% whole grains, are gluten free, and every ingredient is a real, whole food, so at dinnertime you can feel good about what’s going into your family’s bodies! And the best part (to me), is unlike a lot of gluten free recipes out there, this one is made with only two flours- and they aren’t some outlandish unheard of random flour that you can’t find at your local grocery store. Just whole grain oat and whole grain brown rice! Enjoy! :)
Fluffy Whole Grain Gluten-free Cheddar biscuits
Prep Time: 18 mins. Cook Time: 17 mins. Total Time: 35 mins.
(Makes 12 medium size biscuits)
Preheat oven to 400 degrees. Line baking pan with parchment paper. In a medium bowl, combine oat flour, brown rice flour, baking soda, baking powder, salt, garlic powder and parsley. Mix with a fork until well combined.
In a stand mixer, combine melted butter and eggs until well mixed. On a low speed, add flour mixture little by little and mix until batter is thick and it looks slightly dense. This doesn’t take long. With a spatula, fold in the grated cheese.
With a spoon, plop dough onto parchment lined baking sheet. Bake at 400 for 17 mins. Serve hot alongside a home cooked meal or on their own.
